Meal of the night! Weight Watchers!

So tonight I had my first Weight Watchers dinner. I must say it was delicious! I made it for the family also and they loved it! Not only that but it filled me up!! Like I probably should not have eaten that much, filled me up. So since it was so delicious and filling I wanted to share it with you all! Now this meal is worth 10 points. I do not know if that is a lot for a dinner or not but by the time dinner came around I had 29 points I needed to use so I was perfectly fine with that amount.

Chicken Sammy and Fries

1 small uncooked potato cut into fries    3 points

1 cup grape tomatoes                             0 points

1 tsp olive oil                                           1 point

3 oz cooked boneless skinless chicken breast      3 points

1 light english muffin toasted                    3 points

2 piece lettuce                                         0 point

1 slice fresh tomato                                  0 point

1 TBS fat free mayonnaise                      0 point

 

Preheat oven to 450°F degrees and coat two large baking sheets with cooking spray. Toss potatoes with oil and season to taste with salt and pepper and optional spices or herbs. Spread potatoes evenly across one baking sheet, leaving space between cubes. Place baking sheet in oven and roast for 30 minutes or until well browned, stirring half-way through. Meanwhile, toss tomatoes with oil and season to taste with salt and pepper and optional spices or herbs, and spread tomatoes evenly across second baking sheet. Roast for 15-20 minutes or until softened. Season to taste with fresh herbs, salt and pepper. 

Next, place chicken on toasted muffin and top with lettuce, tomato and mayonnaise. Serve with roasted potatoes and tomatoes.

 

Substitutions:

Frozen veggie burger instead of chicken and serve on reduced-calorie toast or thin sandwich bread. Pair with side salad tossed in oil and vinegar.
